The Ultimate Chocolate Vegan Chip Cookies

To make about 30-35 cookies!
Instructions:
1. Sift the Dry Ingredients:
• In a large bowl, sift together the flour, baking soda, and salt.
2. Mix the Wet Ingredients:
• In a separate bowl, cream the oil and part of the sugar either by hand or using a blender.
• (Tip: If using a blender, don’t add the sugar first—start with the oil and only part of the sugar.)
• Once combined, add the remaining sugar, soy/rice milk, flaxseed mixture, vanilla, and any optional flavorings like orange zest or mint extract. Blend until smooth.
3. Combine Wet and Dry:
• Pour the wet ingredients into the dry mixture and stir until just combined.
4. Add the Oats and Chocolate:
• Gently fold in the rolled oats and chocolate chunks.
5. Form Cookies:
• Shape the dough into balls about 2 cm in diameter and place them 2 cm apart on an ungreased baking sheet.
6. Bake:
• Bake at 170°C (338°F) for 9-13 minutes, until the edges are golden but the centers are still soft.

Dry Ingredients:
• 3 cups flour
• 2 tablespoons baking soda
• 2 tablespoons salt
Wet Ingredients:
• 1 and 1/2 cups canola oil (or other vegetable oil like sunflower)
• 2 and 2/3 cups sugar
• Optional: orange zest or mint extract
• 4 tablespoons soy or rice milk
• 4 tablespoons flaxseed meal (soaked in warm water to form a thick, gloopy mixture)
• 3 tablespoons vanilla extract
Other Ingredients:
• 5 cups rolled oats
• 1 and 1/2 cups chocolate chunks
