Elderflower Cordial Recipe

Elderflower Season

The recipe:

Ingredients:

  • 2 organic lemons, cut up

  • 1 grapefruit, cut up

  • 15 elderflower heads (freshly picked from a clean, non-polluted area, look for Sambuco nigra Tree)

  • 2.5 litres of water (at room temperature)

  • 1 kg of white sugar (you can use dark, but your cordial will be more brown looking and have an intense taste)

Instructions:

1. Prepare the Elderflowers:

- Shake the elderflower heads gently over a tray to remove any bugs. Avoid washing them to retain the pollen and its aroma.

2. Combine Ingredients:

- Place the elderflower heads, cut lemons, and grapefruit into a pot.

3. Add Water:

- Pour 2.5 litres of room temperature water over the elderflower, lemons, and grapefruit.

4. Boil:

- Put the pot on the stove and allow the herbal tea to come to a boil. Turn off, cover with a cloth and infuse until the day after.

5. Strain:

- Strain the liquid through a fine sieve or muslin cloth (depending how clear you want it). Discard the solids.

6. Making the syrup

- Add the sugar to the pot, bring it to a boil, and simmer for about 5 to 10 minutes, until the mixture reaches a syrupy consistency.

6. Store:

- Pour into sterilized bottles and seal them. If it is well stored the shelf life is at least between 4-6 months (even a year if you keep it in the fridge.

Serving Suggestion:

- To serve, dilute the cordial with water (still or sparkling) to taste. It also pairs wonderfully with tonic water and Prosecco Dry Brut. You can also use it in pastries and creams.
