STEFANO & KATIA

Stefano grew up in a family of old-school bakers, working in the bakery alongside his studies. After university, he established himself as an entrepreneur in the baking industry. Katia, with a background in design from Milan, ran a successful event planning business. Married and weary of the fast-paced work life, they sold everything in 2017 to embark on a long-term volunteer journey abroad. This experience sparked a profound inner transformation, characterized by slower living, constant meditation, and heightened self-awareness. Their daily routine became infused with curiosity, study, and experimentation.

Rekindling their love for tradition, Stefano and Katia began exploring lost flavors and lesser-known culinary worlds, drawn to the rich histories and genuine connections behind each ingredient. Returning to Italy in 2020, they opened "Grano Nostro," a small bakery specializing in ancient techniques and natural spontaneous fermentations. They produce bread loaves reminiscent of the past, using flour they mill themselves with a natural volcanic stone mill from Mount Etna. Their mastery of large fermented goods, particularly Panettone and Pandoro, sets them apart.
